Norm and André are thrilled with their Christmas present this year: a gyropallet for riddling sparkling wine bottles. It may not look sexy but it will reduce the demanding human labor required to hand riddle bottles. Since 2005, we've been hand riddling our boutique handcrafted sparklers. We're already using the new machine and extremely happy with the results.

The Widow Clicquot or Veuve Clicquot, known as the "Grande Dame of Champagne," originally improved the méthode champenoise. Under her management and her skill with wine, Veuve Clicquot developed early champagne using a novel technique called riddling. Modern technology takes it to a new level to further perfect the method.
