Food Pairing
Strong white cheddar cheese, oysters on the half shell, white fish or pork chops with apple sauce. On the sweeter side, try an apple strudel or cheese Danish.
Production Notes
Chardonnay clone 4; 62 cases produced.
Tasting Notes
Enjoy hints of unripe peaches, lemon curd and creme brûlée on the nose. The wine is showing elegance in it’s youth that will become richer with age. The crisp, refreshing hints of green apple with a light toastiness make this wine a crowd pleaser. Soft minerality rounds off the finish.
Vineyard Notes
This is the first vintage of Flying Goat Cellars Blanc de Blancs from Rio Vista Vineyard in the Sta. Rita Hills AVA. Previous vintages of Blanc de Blancs were from Sierra Madre Vineyard, with our final vintage in 2016.
Winemaker Notes
We’re excited to release our new expression of Chardonnay from Clone 4. Just before completing the primary fermentation, the juice was gently moved to neutral French oak barrels to attain a touch of creamy texture from the barrel while finishing fermentation. The young wine was filtered and decanted into sparkling wine bottles, a tirage of sugar and yeast added and a crown cap applied. After aging, it was riddled to collect all the sediment from the secondary fermentation. The wine was then disgorged by hand, no dosage was added, a champagne cork quickly inserted, a wire cage applied and the Goat Bubbles signature wax cap (purple for Blanc de Blancs) added for the finishing touch.
