Food Pairing

Hints of peach, green pear and green pineapple linger on the palate. Pair with ceviche, smoked salmon or a dry cheese, such as Manchego. For a vegetarian approach, pair simply with avocado, papaya, lime and salt. For dessert, pair with Florida key lime pie or old fashioned cheesecake

Tasting Notes

Delight in the lively bubbles and honeycomb color of this sparkler. The elegant hue of this sparkler reminds me of the antique lace wedding gown I wore at my wedding to Norm. Citrus aromatics, such as lemon lime custard, are enhanced with a floral touch. Vibrant flavors dance across the tongue like a meadowlark’s melodious song in flight.

Vineyard Notes

From a winemaking standpoint, Pinot Blanc from Santa Maria Valley produces elegant fruit forward still wines and we decided to try it in a sparkler. This is our ninth vintage of Crémant and we have noticed consistency in the vineyard each year.

Winemaker Notes

Pinot Blanc grape is a white wine grape that is a point genetic mutation of Pinot Noir. Pinot Noir is genetically unstable and will occasionally experience a point mutation in which a vine bears all black fruit except for one cane which produced white fruit. We include this grape in our portfolio because it fits with our love of working with Pinot Noir. Also, the vibrant fresh fruit flavors and refreshing acidity of Pinot Blanc make it a perfect grape for sparkling wine.
