Food Pairing
This wine is perfect with a Christmas ham, seasoned with clove and brown sugar, roasted glazed duck and pork tenderloin. Dark chocolate covered espresso beans and dark chocolate cake with raspberry coulis make a delicious dessert pairing.

Tasting Notes
The nose reveals cocoa powder and espresso beans, bresaola or smoked bacon. Blackcherry, red currant and lingonberry tantalize the palate while dusty, smoky tannins linger on. Age 5-10 years or open at least two hours before drinking to enjoy the full flavors of this youthful wine.
Winemaker Notes
This wine was made just for our Philosophers Club members to enjoy during the holiday season, or any special occasion, with friends and family. For the first time Norm made Pinot Noir from clone 777. Rio Vista Vineyard is one of the select vineyards we source from in Sta. Rita Hills AVA. The grapes were picked at 22.1 Brix and the wine was barrel aged in French oak for eighteen months. This wine is one of a kind in our portfolio.
