Food Pairing

Recommended pairings for brunch include lox, bagels, capers and cream cheese. Later in the day, pair with hors d’oeuvres, such as bacon wrapped figgs or spanakopita, or a main course, such as roasted duck a l’orange. Paneone and sugar cookies are lovely dessert pairings.

Tasting Notes

Pour this wine into a flute and behold a visual “golden hour” with beautiful pink and gold hues. The nose reveals fresh bread dough, ripe cantaloupe and papaya. Likewise, the palate oers these expressions, along with apple pie crust and sugar cookie dough. Rich on the front end, when this sparkler hits the tongue it changes smoothly as a Mercedes, with even more layers of complexity.

Vineyard Notes

This is our six vintage sourcing fruit for bubbles from Ampelos Vineyard in Sta. Rita Hills AVA. The vineyard is unique because it is certified as organic, biodynamic and sustainable in practice, which is a trifecta for wine and Mother Earth.

Winemaker Notes

The Pinot Noir grapes were picked on September 8, 2021, with 19.5% Brix and then whole cluster pressed. Towards the end of fermentation, the
wine was gently moved to neutral French oak barrels to attain a touch of creaminess while aging. The young wine was filtered and decanted into sparkling wine bottles and a crown cap applied. This resulted in a secondary fermentation in the bottle which produced carbon dioxide in the wine. After several years of aging, the wine was then riddled by hand to collect all the
sediment from the secondary fermentaon. This Blanc de Noirs was disgorged by hand, a champagne cork inserted, a wire cage applied and the Goat Bubbles signature wax cap (gold for Ampelos) added for the “Midas touch”.
