Food Pairing

Pair with food as simple as a Costco pepperoni pizza. Or for more decadent pairings, we recommend Motley Crew goose or quail and date wrapped in bacon. Faye’s dark chocolate coconut cookie that we call a “Fayedoodle” is perfect for the sweet touch.

Tasting Notes

The exquisite color of this wine is as elegant and mysterious as a velvety Baccara rose. The nose offers aromas of floral notes, dried leaf forest floor and black plum. On the palate enjoy hints of brown spice, such as anise, dark chocolate covered cherries and
earthy Mayan cacau. Ageable tannins with long lasting softness will delight for years to come.

Vineyard Notes

We’ve been making bubbles from Ampelos Vineyard for several years but this is the first vintage of our still Pinot Noir from the vineyard. It’s unique because it is certified as organic, biodynamic and sustainable in practice, which is a trifecta for wine and Mother Earth. Notably, the first vineyard in the country with such distinction. Our respect for owners Peter & Rebecca Work led to our collaboration with their vineyard.

Winemaker Notes

We are thrilled to have Ampelos Vineyard in our portfolio. Norm was able to work with a clone that is new to our portfolio, 828, which brings a more elegant component to balance the wine. Clones 828 and 667 were co-fermented, which is a new approach at Flying Goat. We typically separate the fermentations of each clone before blending them.
