"Sour yellow apples, tangerine-rind, orange-blossom and pizza-dough aromas show on the nose of this single-vineyard sparkler by regional bubbly pioneer Norm Yost. Dried apple and sour lemon aromas play with honeysuckle on the sip."

--Matt Kettmann

Food Pairing

Enjoy with your favorite Rom-Com and popcorn. Other pairings include chicken apple sausage, goat gouda, coconut shrimp or poached salmon. Kate recommends a coconut macaroon. As the wine ages, the youthful flavors will gain more complexity and richness.

Production Notes

Chardonnay clone 15; 130 cases produced.

Tasting Notes

Notice the super fine bubbles dancing in the glass while notes of citrus blossom, Anjou pear and almond essence tantalize the nose. Wet granite and salinity, with hints of yellow grapefruit and Key lime pie, envelop the palate.

Vineyard Notes

Flying Goat Cellars Blanc de Blancs is from Sierra Madre Vineyard in the Santa Maria Valley. Chardonnay Clone 15 was selected for its small cluster and berry size, appley and citrusy flavors at low Brix levels.

Winemaker Notes

The grapes were handpicked in xxx and then whole cluster pressed. Just before completing the primary fermentation, the juice was gently moved to neutral French oak barrels to attain a touch of creamy texture from the barrel while finishing fermentation. The young wine was filtered and decanted into sparkling wine bottles, a tirage of sugar and yeast added and a crown cap applied. After aging, it was riddled to collect all the sediment from the secondary fermentation. The wine was then disgorged by hand, a small amount of dosage added, a champagne cork quickly inserted, a wire cage applied and the Goat Bubbles signature wax cap (purple for Blanc de Blancs) added for the finishing touch.
